For a quick and easy summer recipe you can’t go past BBQ Beer Can Chicken courtesy of April Ieremia and the team at Food TV. Simply follow the steps below and you’ll whip up a feast for friends and family in no time!
Ingredients
1 can of Beer
1 tsp Garlic cloves (minced)
2 tsp Sugar
2 Tbsp Cajun spice mix
2 Tbsp Olive Oil
1 Size 13 Chicken (fresh)
Method
Open tab on beer can, use ½ the contents.
Place the garlic into the beer can.
Mix sugar and spice mix together.
Coat the chicken with olive oil, inside and out and then apply your secret flavouring.
Insert beer can into cavity so the chicken is sitting upright, tie the legs together with string.
Cook for approx 2 hours on your Rinnai BBQ till done.
Ingredients – Roast Vegetables
3 Kumara (peeled & roasted)
4 Parsnips (peeled & roasted)
4 Potatoes (scrubbed clean & roasted)
3 Carrots (peeled & roasted)
4 sticks Rosemary (leaves stripped)
1 handful Fresh Thyme
1 head Garlic (smashed, skins left on)
½ Tbsp Sea Salt
4 Tbsp Olive oil
Method
Pre-heat the oven solid top griddle on your Rinnai BBQ.
In a mixing bowl, coat all the vegetables with the herbs, olive oil and sea salt, toss together and grill on your Rinnai BBQ for 30 minutes or until cooked, tossing frequently.
